Unicorn Noodles For Spring Rolls



Look at this gorgeous color on these noodles. Blue and purple. I used an old standby that is used in Southeast Asian cuisine to color rice, desserts, and drinks. The Butterfly Pea flower is a beautifully vibrant flower that dyes two distinct colors. The blue you see on the far left is the regular flower.



 Once you add an acid, like lime juice the tea reacts with the acid and turns a pretty deep pink purple color. It's fun to make tea with this flower and serve it with a lime wedge on the side. I posted a video on Instagram of this, once you squeeze the lime into the drink the color changes instantly. It's really pretty. The flower itself doesn't have much of a flavor so it's great and neutral. For drinks I add other teas or fruit for flavor, then use the Butterfly Pea for color.


For these noodles I simply put the dried flowers into my spice ball and place it into the water to boil the noodles. After the water comes to a boil add the noodles. Once the noodles are cooked remove them, reserve the cooking liquid.  Rinse and set them aside. For the second batch, add lemon juice, lime juice, or vinegar, about 1 tablespoon to the pot, adding more water if needed. 


Cook the noodles according to package directions. Rice noodles, clear cellophane noodles, even pasta can be dyed this way.  Don't forget rice! It dyes really well, just steep the water and cook the rice in it. Perfect for Coconut Mango rice, you can find that recipe here. Sorry, it's a old one so the photos are horrendous.
For other colors try turmeric, beets, or carrot juice to dye your noodles.


Spring Roll recipe and method can be found here. Below is what we put in the pictured Spring Rolls. So yummy and filling, perfect way to get vegetables into our bodies too! You can add whatever you want. Make them savory or sweet by adding fruit.


This Satay Sauce is perfect for dipping, you can use Sunbutter or Almond butter (Peanut is okay also).


Unicorn Noodles

1/4 cup dried Butterfly Pea flowers
1 package of noodles, rice, wheat, cellophane etc
1 tablespoon vinegar, lemon juice, or lime juice 

How to dye your noodles:
  1. Place dried flowers into a spice ball or in cheese cloth and secure.
  2. Place the flowers into a pot with enough water to cook the noodles in.
  3. Turn on the heat and bring the water to a boil.
  4. After the water comes to a boil add the noodles. 
  5. Once the noodles are cooked remove them, reserve the cooking liquid.  
  6. Rinse the noodles and set them aside. 
  7. For the second batch, add lemon juice, lime juice, or vinegar, about 1 tablespoon to the pot, adding more water if needed. 
  8. Cook the noodles according to package directions.
  9. Drain and rinse.
